Effect of Heating Time on the Value of Viscosity, Density, and Acidity

Evaporator machine is a machine that functions to evaporate a liquid. Evaporator machines are required to evaporate a liquid so that the water content of a liquid can be reduced with the aim of getting good results when proceeding to the crystallization process. In this final project, an evaporator machine was built to evaporate lemon juice at a temperature of 60ËšC. The evaporator machine was built with a size of 100 cm x 100 cm with a volume capacity of the evaporation tube 4 kg/m3. Lemon juice which was evaporated for 0 hours, 1/3 hours, 2/3 hours, 1 hour, 4/3 hours, 5/3 hours, and 2 hours was tested for density, viscosity, and acidity values using a pycnometer, viscometer. ostwaltd, and pH meter paper. Based on the results of the evaporation test for two hours, the highest value of density was 0.997 g/ml, viscosity 1.11 Ns/m2 and acidity level 5. From all tests of lemon juice that was evaporated using an evaporator machine, it can be concluded that longer evaporation can increase the density and lemon juice viscosityReferences
